We have many customers ask us how our chocolate tastes so amazing and why they can’t find anything like it on supermarket shelves. You may hear a lot talk about “Belgian” chocolate and it being widely regarded as the best chocolate in the world. But let’s delve a little deeper to understand what the real secret to great chocolate is… couverture chocolate.

Essentially, couverture is a special form of chocolate, which is richer, creamier and glossy in appearance, is a higher quality than regular chocolate. This high quality comes predominantly from the sourcing and usage of superior beans, which are ground finely to achieve a smooth and uniform flavour. Couverture also contains minimum levels cocoa butter content. The cocoa butter is expensive and is what usually gets substituted by supermarket brands with inferior ingredients such as palm oil.

Using couverture chocolate in combination with careful tempering, gives that pleasant and satisfying snapping sound when it is broken. This professional-quality chocolate is well-suited to delicate designs, and due to its luxury status in the world of chocolate, you will not find it just anywhere!
